Honey Chipotle Chicken Wings


Ingredients

1 pound chicken wings
1/2 cup honey
1 cup ketchup
4 chipotle peppers in adobo sauce, chopped
1 tablespoon adobo sauce
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1 teaspoon smoked paprika
1 tablespoon rice wine vinegar

Directions

  1. Preheat oven to 400 degrees F. 
  2. Skin and clean the chicken wings, removing any extra fat or tendons and place in a medium size bowl and set aside. 
  3. In a small saucepan combine the remaining ingredients and cook over medium heat for 5 minutes stirring occasionally. Remove from heat. 
  4. Add 1/2 cup of the sauce to the chicken wings and toss to coat. 
  5. Lightly spray a baking rack with cooking spray and place on a parchment lined baking sheet. Place the wings on the baking rack and baste the wings then bake in the oven for 30 minutes. 
  6. Remove the wings from the oven and baste with the remaining sauce. Raise the heat to 450 degrees and bake for 5 more minutes or until caramelized. Remove and serve with additional sauce and Ranch dressing if desired. 
  7. ** If you want to use the remaining Chipotle Honey sauce as a dip for the chicken wings, be sure to bring the sauce to a boil for a few minutes, stirring constantly, to cook out any contamination that may have occurred when basting back and forth from the wings to the sauce.
